Why We Made Pancakes: Evergreen’s New Frozen Pancakes Are Here

If you know Evergreen, you know we started with waffles.

I founded Evergreen because I wanted a better frozen breakfast for my kids. Something I could pull out of the freezer on a chaotic weekday morning that was incredibly delicious, super easy, and made with the kinds of ingredients I would choose if I were making breakfast myself (because I was).

For years, waffles have been our thing. But there was one small problem in my house: my kids consider pancakes an entirely different food group.

Apparently, a waffle is not a pancake. And when your kids are requesting pancakes on a Tuesday morning when you have approximately seven minutes to get everyone fed, dressed, and out the door, making a batch from scratch isn't always in the cards.

So we decided it was finally time to make pancakes.

But we wanted to do pancakes the Evergreen way.

What Does an Evergreen Pancake Look Like?

When we started developing our frozen pancakes, we weren't interested in simply putting our name on another breakfast product.

We wanted the fluffy, nostalgic pancakes my kids love, but made with the simple, recognizable ingredients that have always defined Evergreen.

That meant looking at the classic pancake and asking: How would we make this the Evergreen way?

The answer became our new Thick & Fluffy Pancakes and Protein Pancakes, our first products beyond waffles and a pretty exciting next chapter for Evergreen.

Thick & Fluffy Pancakes, Made the Evergreen Way

Our new Thick & Fluffy Pancakes are exactly what the name promises: light, fluffy, satisfying pancakes that taste like the classic breakfast you grew up with.

They're made with 100% whole grains, eggs, avocado oil, and our hidden veggie blend of zucchini and carrot. They're also Certified Non-UPF and deliver 9 grams of protein and 5 grams of fiber per serving.

They come in Homestyle, Blueberry, and Chocolate Chip. I am personally obsessed with Chocolate Chip, but I encourage you to conduct your own very scientific family taste test.

And, Of Course, We Made Protein Pancakes

We also knew we wanted to bring the same approach we took with our Protein Waffles to pancakes.

Our Protein Pancakes have 15 grams of protein per serving, with the majority of that protein coming from Greek yogurt and eggs, rather than protein powders or isolates.

That distinction was important to us. We wanted to create a higher-protein frozen pancake while staying true to the way we approach food at Evergreen: start with simple ingredients and figure out how to make them work harder.

From Waffles to Pancakes

When I started Evergreen, I wasn't thinking about building a portfolio of frozen breakfast products. I was thinking about breakfast the next morning.

I was a busy mom trying to find something convenient that my kids would actually eat and that I could feel good about serving them. That balance between what kids crave and what parents are looking for has shaped everything we've made since.

These pancakes are no different. They're fluffy, delicious, incredibly easy on a busy morning, and made the Evergreen way.

My kids may insist pancakes and waffles belong in completely different food groups.

I'm starting to think they might be onto something.
